Last week Deborah Wood, BSG Canada’s Brewing Ingredient Specialist, participated in a collaboration brew with L’Espace Public to create a beer that will be served at the brewery’s booth at Mondial de La Bière 2018 in June.
The beer, named Eraclea Épinette, is built around Weyermann® Eraclea Pils and spruce tips harvested from Deb’s land in rural Quebec.
The delicate, aromatic Eraclea pilsner malt will enhance the flavor and aroma profile of this historically inspired brew that dates back to the first years that the French voyageurs arrived in Quebec. The high vitamin C content of the spruce prevented scurvy and also balanced the sweetness of the malt. I will boil spruce tips in the wort till I like the flavor – the last time I made this beer I needed to do a 90 minute boil.
